Nutrumami

Nutrumami was founded in 2022 by Frederik Jensen, a former culinary director and restaurateur, to unlock multifunctional plant proteins through fermentation. Its patented cross-fermentation process, a sequential biotransformation combining solid-state and submerged fermentation of fava beans, oats, and salt, produces FermiPro, an ingredient that adds umami and kokumi flavor plus texture and protein to plant-based foods. In September 2025 the Copenhagen-based company rebranded to Summ Ingredients and closed a EUR1.7M ($2M) funding round backed by EIFO, BoxOne, Kost Capital, and Planetary Impact Ventures, bringing total funding to about EUR2M ($2.3M).
