Umiami is a Paris-based food tech company founded in 2020 by Tristan Maurel, Martin Habfast, and Hugo Dupuis. The company developed a proprietary protein texturizing technology to create plant-based whole-cut meat alternatives — specifically chicken filets — that closely mimic the texture and taste of animal meat. Umiami opened a commercial-scale production facility in the Alsace region of France in 2024, backed by government and EU funding. The company distributed products through major European retailers including Coop in Switzerland. In October 2024, Umiami rebranded to SWAP Food and launched in the North American market starting in Chicago. The company raised a total of approximately €59 million in Series A funding.
