Nukoko

Nukoko is a Guildford, UK-based food technology startup that has developed a fermentation process turning fava beans into a cocoa-free chocolate alternative that closely mimics traditional cocoa fermentation. Founded in 2022 by chocolate industry veterans Ross Newton and Kit Tomlinson alongside cocoa research scientist Professor David Salt, its 'bean-to-bar' product produces up to 90% less CO2 emissions than traditional chocolate while offering 40% less sugar and added protein and fibre. Nukoko has development agreements with major food manufacturers and retailers, including Swiss retailer Coop.
