Founded by Harvard engineers, the company's patented process spins plant protein fibers like cotton candy to create structured cuts of meat — including beef short rib, shredded pork, shredded chicken, and chicken slab — with 8g of protein per serving, zero cholesterol, and kosher certification. Formerly known as Boston Meats, the company raised over $11 million in Series A funding led by Rhapsody Venture Partners in June 2024 and launched a commercial partnership with Clover Food Lab.
