Standing Ovation

Standing Ovation is a Paris-based precision fermentation company founded in 2020 by Romain Chayot and Frederic Paques. The company has developed Advanced Casein™, a patented casein protein produced by fermentation using acid whey as a carbon source, offering the same nutritional and functional properties as animal-derived casein with 74% lower CO₂ emissions, 99% less land use, and 68% less water consumption. Standing Ovation has partnered with major food companies including Bel Group and Danone Ventures, and raised a €30 million Series B in March 2026 to commercialize its proteins in North America. The company holds French Tech 2030 status and is backed by Bpifrance and Crédit Mutuel Innovation.
